Sheep’s milk cheese made from only freshly harvested sheep’s milk. It is white in color and its main characteristic is freshness. Matures a few days once salting is completed. It has a mild flavor and the savoriness is concentrated in the peel. The uniqueness of this product lies in its texture, so much so that in slang language it is referred to as the cheese that ”cracks in the mouth”

Production of the product varies according to the availability of fresh sheep’s milk.
